Need a quick appetizer that is simple to make and sure to please the crowd? Then you have to try these bacon-wrapped dates. The combination of the salty bacon and the sweetness of the date compliment each other perfectly. Plus, since they are pitted, you can add a little surprise in the middle of them to it that wow factor. Not only does my wife love these, but my kids devoured them.
Bacon-Wrapped Dates
- 1 lb of pitted dates
- 1 1/2 lbs of butcher bacon
- whole blanched almonds (blanched means that the skin is removed; I use Marcona Almonds from Trader Joe’s)
- goat cheese
- toothpicks
Take your dates and ensure that it is pitted. Then take a little goat cheese and stuff it where the pit was along with one almond. Then take 1/2 strip of bacon, wrap it around the stuffed date and stick a tooth pick through it. Place the bacon-wrapped dates on a backing sheet lined with aluminum foil (this makes it easier to clean up) and bake at 400 degrees for about 15-20 (until the bacon is nice and crispy). Then remove them from the baking sheet and let them cool and “drain” and serve. Make a lot because they are guaranteed to go fast.
