Then I discovered that if you add a little spice and love to it in the kitchen, you can easily benefit not only from its dense nutritional and healing properties, but transform it into a tasty and healthy side dish.

In this recipe we take the power of cauliflower, and the magical health benefits from the spices in curry powder, to create a simple recipe that can help anyone meet their health goals.
- 1 medium head cauliflower (stems removed, trimmed into large florets)
- 2 TBS of organic extra-virgin olive oil
- 1-2 tsp of curry powder (curry can have a kick to it)
- 1/2 tsp Himalayan sea salt (the pink stuff; it has less sodium)
Preheat your oven to 400 degrees. Next, heat oil in small skillet over medium-low heat. Add curry powder; cook, stirring constantly, for 15 to 30 seconds, or until fragrant, taking care not to burn. Remove from heat. Then, mix cauliflower and curry mixture in a glass baking dish. Make sure and cover enough to turn the cauliflower yellow. Add salt and bake for about 20 minutes, stirring gently a few times while baking.
