Curried Cauliflower

I used to think that all cauliflower was good for was dipping in some ranch dressing or filling a hole in a veggie tray. Then I discovered that if you add a little spice and love to it in the kitchen, you can easily benefit not only from its dense nutritional and healing properties, but transform it into a tasty and healthy side dish.

Curried Cauliflower

Preheat your oven to 400 degrees. Next, heat oil in small skillet over medium-low heat. Add curry powder; cook, stirring constantly, for 15 to 30 seconds, or until fragrant, taking care not to burn. Remove from heat. Then, mix cauliflower and curry mixture in a glass baking dish. Make sure and cover enough to turn the cauliflower yellow. Add salt and bake for about 20 minutes, stirring gently a few times while baking.
