As I’ve stated before, I love to grill. One of my go-to recipes is grilled chicken breast. I will typically grill about 8 breasts in the beginning of the week, eat it for dinner that night, and then store the rest for simple quick meals for lunch. I’ll cut it up and pack it in my boy’s lunch and chop some chicken up for salads too. I always try to eat some type of protein during each meal and pre-prepping food helps me reach my weight loss and health goals.
Now, I just don’t throw the chicken on the grill, but I take it and magically transform it into the “Best Chicken Ever” by creating a simple spice, juice and oil rub that keeps it moist and seasoned perfectly. It is not overpowering, so it makes a great foundational base in order to use it with any recipe or meal, either that night or later in the week.
Best Chicken Ever
- 8 chicken breasts
- 1 TBS of organic extra-virgin olive oil
- 1 TBS of fresh lemon juice
- Himalayan sea salt (the pink stuff; it has less sodium)
- ground pepper
- garlic salt
- dried cilantro
- dried parsley
Make sure your meat is thawed and place it on a large serving plate (making sure that they are not overlapping). Drizzle oil and lemon juice on chicken. Rub it all over on both sides. Then season it with the remaining spices on both sides. Let it sit for about 10 min on one side, then flip it, and let sit for about another 10 while your grill pre-heats. After pre-heating your grill, turn down the heat and cook at medium heat. After grilling (make sure it’s cooked all the way) let the chicken sit for about 10 minutes or your lose all your juices.
