Summer is in full force and for us that means lots of parties, picnics and cookouts. The question that always comes up is, “What are we going to bring?” Well, this Wild Rice and Cranberry Salad is one of our go-to side dishes that always pleases the crowd. It’s gluten-free and is a great mix of tang and sweetness. It’s full of whole foods, healthy fats and is one of my favorite cheat foods. I do not typically eat grains, but when I do, this is on the top of my list.
Wild Rice and Cranberry Salad
- 16 oz of organic wild blend rice (make sure it is certified gluten-free and non-gmo)
- 8 oz of organic feta cheese (make sure it is real and not made from cow’s milk)
- 1 cup of diced sweet peppers (I use yellow and red)
- 1 large red onion
- 1 1/2 cups of toasted pine nuts
- 2/3 cup of organic extra-virgin olive oil
- 4 TBS of white wine vinegar
- 5 oz of organic dried cranberries
- salt and pepper to taste
Toss the ingredients and let it chill overnight (preferably about 24 hours). Serve at any party and be the rock star. WARNING: People will ask for this recipe! You know where to send them:)
